The advent of the non-stick cookware

Indian cooking of all types generally has one common tendency: The ingredients stick to the cooking surface, unless the cooks add sufficient oil, ghee or water to the ingredients or keep stirring the mix all the time. For ages, most of the cooking skill involved prevention of the ingredients from sticking to the cooking surface. All types of paranthas, rotis, vegetables, and most of the sweets have a strong tendency to stick to the cooking surface. Scrapping of the pot used for cooking used to be one of the major cleaning jobs a generation or two back.
