Delight your taste buds with delicious Vegetable biryani

Delicious food is something that finds a place in everyone’s interest. It is almost impossible to find a person who does not like good food. Rice is a major food item of India and has been used from centuries to prepare many magnificent dishes. Another famous dish made from rice in India is biryani. Biryani is a delicious main course item full of dry fruits, saffron, spices and vegetables. It was introduced to Indian cuisine during Mughal period and now is a main dish in many regions of India. Biryani has many variants in India such as Vegetable biryani, Chicken Biryani, Mutton Biryani, etc.

Vegetable Biryani

Vegetable biryani is really a delightful dish that can be consumed by everyone and is full of aromas, texture and taste. It is a one pot dish and can be made very easily. The ingredients needed for Veg. 


Biryani are:

•    ½ cups Long grained rice
•    1inches of cinnamon
•    1 cardamom
•    1 bay leaf
•    1 clove
•    ½ cup boiled and mixed vegetables chopped
•    ½ tsp cumin seeds
•    ¾ cup onion chopped finely
•    2 tsp Coriander
•    1 tsp red chilli powder
•    1 cup tomatoes
•    ¼ cup cottage cheese
•    ¼ tsp turmeric powder
•    2 tsp ginger paste
•    1 tsp green chilli paste
•    2 table spoon oil- for frying
•    Some drops of saffron colour

Combine rice, salt, cinnamon, cardamom, cloves, Bay leaf in four cups of water in a pan and place it on a medium flame for twelve minutes. After that, strain the rice with the help of a strainer and keep them aside.

Now heat oil in a pan and add some cumin seeds. After the seeds start crackling, add onions and toss them on medium intensity flame for 2 minutes. Add other spices such as coriander leaves, turmeric powder, chilli powder, ginger and green chilli paste and sauté them on a medium flame for one minute. Now add tomatoes and water and cook them on medium heat. Now add vegetables, cottage cheese, and salt and cook them further for few minutes on medium heat and keep stirring them during this time.

Now combine saffron colour, rice mixture and coriander and mix well. Now transfer half of the prepared rice mixture in a pressure cooker and spread it evenly. Now add vegetables gravy prepared to the pressure cooker. Now add the remaining rice mixture and pour some butter or Ghee to it. Now place the pressure cooker on a slow flame and keep it cooking for thirty minutes.
