An introduction to Indian cuisine

Over the past few years, Indian cuisine has gained popularity all over the world. Indian cuisine has developed an exclusive identity all over the globe due to its exclusive and rich recipes and unique cooking style.

There are, basically, four regions in India that are North, South, East, and West. The cuisine and culture of every region is very different from each other. South Indian food is very much spicy as compared to north Indian dishes. The main food item that is used in South India is rice as it is the main staple crop of this region. Rasam and sambhar are the curries that are mainly used with rice. The use of fruits and vegetables is very extensive in making these curries. Use of spices like curry leaves, chillies, cloves, cardamom, cinnamon make the cuisine very rich in aroma, taste and texture. Idli and Dosa are the main breakfast items served extensively in this region. 

The eastern part of India has a very simple style of cooking, and due to availability of a large variety of fruits and vegetables, there are many vegetarian dishes that are served in this region. Main methods of cooking here are frying and steaming. Sweets and desserts are also main part of cuisine in eastern parts of India. The western part of India has a very less supply of vegetables and has very spicy and sour dishes that are both vegetarian and non-vegetarian.
