In induction cooking, the heat is transferred to the cooking vessel by electrical induction, not by thermal conduction. So the cooking vessel has to be made of cast iron or stainless steel. Copper, glass or aluminium vessels can only be used with a ferromagnetic disk acting as the traditional hotplate.
